Empanada Cupcakes

Well I know I am not the only parent that has gotten dooked into last minute baked goods. Today was the last day of school for my son. Well I had been telling him for weeks. If you are going to have parties in school and need some goodies. Please let me know in advance. Well advance for my son was yesterday. So yesterday I was baking all day so my son could take the cupcakes to school. Now I only did very plain cupcakes with icing and some sprinkles.

Since it was last minute right? Plus middle school kids are only thinking about getting that cupcake into their belly. They do not care what is on it. Well my son the Chef wanted me to make some summer inspired decorations. As you can see I won the battle as I was not going to stay up all night trying to come up with some designs for 40 cupcakes. Because of course he wanted them to be a variety. Well I told him the next time I need something I will give you the same amount of notice and will expect the same. Lol he didn't feel that for one minute. But since I know my son wouldn't eat a cupcake in school I figured I would make him a special one. Well that is when I decided to make him a cupcake with Empanada's on it. Yes my son loves them and he would be so surprised when he got it.

So here is how to make your Empanada cupcakes.
After tinting your fondant to the color brown of your choice
Roll out and use a round fondant cutter

Next take a small piece of fondant and roll into the size of a tablet.

Place tablet in middle of the cut out fondant

Fold over and press with your leaf veiner.

There you go you have an empanada cupcake
Leave me a comment on what last minute items your child may have wanted. Or crazy cupcakes you may have made to surprise you little angels.

  1. Oh, you're such a genius!
You turned a rather simple cupcake into a wonderful one. It's like eating two desserts in one. haha! :)
