Momma's Fried Chicken

OK well my darling husband and son love when Momma makes some fried chicken. But they like their chicken extra crispy and boneless. So I decided to be nice and make them their favorite today. I thought that I would share it with you so you would see how Momma does it in her house.

Recipe:
Boneless Chicken Tenderloins
Flour
Milk
Eggs
Oil to fry
And your favorite Spices. I use Mrs. Dash Original Blend, Adobo, Garlic Pepper (we can't live without it), and Sazon ( it gives it a deeper color when it fries. Call me crazy but I love all my food to have nice color.



Take a large bowl and place rinsed chicken and two eggs in the bowl.
Now add the milk (sorry I do not measure it but if you are going to double dip like I do you probably need like 3-4 cups)
I also add all the seasonings at this time to the milk and egg mix.

Here you have the chicken and mixture all mixed up together. Now the more time you let the chicken sit. The more flavor it will have. But please note that if you use Adobo or any seasoning with salt you do not want to add too much nor do you want to let sit for too long because the chicken will come out salty.

Now in a medium bowl you want to take your flour. You may want to use 3-4 cups of flour. As stated before depends on your dipping amount. If you want extra crispy then you will need to double dip in here also.

Now the same seasonings you added to the milk mix. You will add to the flour. I just do not add the Sazon to the flour. But you can if you want.

Just in case you did not know what they were or looked like 8)

After you have let your chicken sit for the time that you wanted you will start taking the pieces and dipping into the flour.

Make sure to cover the chicken fully with the flour.

Now if you want extra crispy chicken at this time you will re-dip the chicken into the milk and egg mix. ( note: For less crispy you will skip this step and continue on with the frying)

After you have dipped in the milk and egg mixture you will now re-dip into the flour.

Make sure to cover fully once again.

Here is your finished product frying. Doesn't it look good?

Here is the chicken with some herb and butter mash potatoes and some corn. My darling son wanted to make sure his plate was included.

Cream Cheese Danish

OK so for a while now I have been wanting to attempt a Cheese Danish. A dear friend of mine may she R.I.P. was an excellent baker. Though she was married with 3 grandchildren and a full time job. She would always make time to bake. I was so in love with her Cheese Danish and would stalk her down when I was always getting an itch to have some. But never really understanding the work it took and back then had put baking on the back burner. I would always wait around for that special treat from her. One because I knew the work it took for her to make that for me and Two because it was the best Cheese Danish I had ever eaten. Before being able to say goodbye to her I never did get that recipe and I know she is laughing at me from up above.
So this was my first attempt at making a Cheese Danish. I do have to say it did come out delicious. But one thing the recipe asked for was store bought crescent rolls. I didn't want that. I wanted to be able to even make the dough from scratch. But until I find the right dough recipe. This will do for now.

OK well tell me what you think. Not bad for a first timer huh?
Well if any of you have a recipe for the dough I would truly appreciate some help as I would like to really say I really made it from scratch.

Bagels or Bagel Chips?

Happy Saturday everyone. Today while home with my son. We decided that we were going to start a "To DO List". Things that we would like to make and post on the blog.
While chatting my son decided that he wanted to try and make bagels. Yes bagels. I mean couldn't he have chosen something a little more simple. I mean I have eaten a lot of bagels in my day and I tell you they have to be tricky is what I am thinking cause they never taste the same.
Well this was what he wanted to do and since he is my baking partner. I had to come to a compromise. Did I mention he is only 12. Yes but well on his way to becoming a chef someday.
Recipe:
4 cups of flour
1 1/2 cup of warm water
1 packet of dry active yeast
3 tbsp. of sugar
1 tbsp. of salt

4 cups of all purpose flour and 1 tbsp of salt


1 packet of dry active yeast and 3 tbsp of sugar

1 1/2 cup of warm water

Add yeast to warm water

Add sugar to the water and and yeast

Start adding the flour and mix. The mix will start to become thick and you will need to change to a spatula.

As you see the more flour you add the mix starts getting thick and you will need to use your hands to mix well.

(Sorry forgot the picture) Let dough sit for 20 minutes after well mixed
Now the original recipe called for cutting the dough and rolling into logs and making into bagel shapes. I Figured I would try and use a cookie cutter. I think it would have worked out great. But I do not think the dough raised as much as it should have.



After you make your bagels. You will need to simmer them in water for about 7 minutes.
Then lay them to dry while the oven is preheating on 350 degrees.
After they dry place them on a greased cookie sheet and bake in oven from 30-45 minutes depending on the thickness and size of your bagels. When you see them turning brown I would pull out.
So from a mistake that was made. I ended up with two different types of bagels. The one made with the cookie cutter was basically turned into bagel chips. They came out nice and crispy like a bread stick but tasted like a bagel.

Awesome Cupcakes

OK so as we all know I love to read blogs and see what's new out there in the baking world. One of my sites that I love to stop by is the sugarbloomcupcakes. They make such lovely designs. As Promised

OK so I said I would give you my attempt to the "Tuesday Topper".As usual Julie makes it seem effortless. But for a person like myself that is not very good with edible dough. It can get a little tricky. Also how does she get those wonderful pictures? I try and try and no matter how much I try it seems the photographs even give them less justice. I was unable to do it yesterday as I had to have minor surgery. So even though medicated I figured I would try it today. Heck what could it hurt. I would only laugh at myself anyway. If we do not try we will not learn to improve. Right? OK so not the greatest pictures and I promise to make sure they come out better next time. But here is my attempt to the "Tuesday Topper" Thanks to Julie for all her inspiration

Trying out the Tuesday Topper

Hello everyone. I thought I would try my hand at some fondant toppers. Over at thefrostedcakencookie she is wonderful with making these miniature creations. I figured since I am horrible with fondant and we are always battling. Heck why not give it a try. She has these wonderful tutorials and if she can teach me. She can teach anyone. So here is my interpretation of the cupcake Tuesday topper.





I know I know. I am no professional. But I have to say I was not disappointed with how they came out. Because when I say me and fondant do not get along. That is an understatement. But I could not stop myself at just one. I had to try and make a couple more and see how small I could get them. I decided OK this is getting a little crazy so I will stop at three. Which who wouldn't love a mommy cuppie, a daddy cuppie and little baby cuppie! So if you want to learn how to make these. Homemade Pretzels

My darling son has been asking for me to make some homemade pretzels. This was something we had tried a couple years ago without very good results. I decided to try this recipe that I found online @www. wikihow.com. Not knowing what to expect or how they would come out. I was on this venture alone. While he was at school. So I followed the directions as listed on the site besides letting it set over night. If you have boys you know what I mean. They want it right then and there. Here was the end result.


And yes my darling son had to make sure he had the first bite.


Even though they may not look quite like store bought. They definitely came out yummy! I would recommend trying this recipe out if you are a pretzel lover. There is nothing better than saying I made it from scratch. I like my pretzels with mustard. How do you like yours? Leave me a comment and tell me what your favorite pretzel is!

Who doesn't love homemade?

Well it has now become a tradition in my home to make our own pizza. I mean who doesn't like a good pizza? These days we have to watch what we spend and where we spend it. I asked my hubby one day. How about we try to make our own pizza? Wouldn't it be great if we could make pizza whenever we wanted? Well let me just say. My husband has taken over and he loves to make our family pizza. Look what a great job he does. Now wouldn't you want to be able to tell your friends and family. That you made this all on your own?

Hello everyone. I had a late start for Mother's Day and to be honest didn't really do much as far as baking. What can I say I am a mom and I needed a break too. But I would love to see what was being baked over the holiday weekend. Please come by and share.
